This is my favourite Oatmeal Cookie recipe. I usually use cranberries, but if you don’t like cranberries, add Raisins or Chocolate Chips instead. They are quick, and easy to make, and the recipe will make 18-24 cookies (depending on how generous you are with each cookie).
****Preheat Oven to 325****
1 Cup Butter (or Margarine) Softened
1 Cup Brown Sugar, lightly packed
1/2 Cup White Sugar
2 tsp Vanilla (I am always a little generous with the vanilla)
1 & 1/4 Cups Flour
1/2 tsp Baking Soda
1 tsp Salt
4 Cups Quick Cooking Oats
3/4 Cup Cranberries (or whatever you would like in them, raisins, chocolate chips, other stuff)
Roll out cookies, and place them on a cookie sheet lined with parchment paper.
Bake for 13 minutes @325 (for less brown, bake for 12 minutes).
